Head of Mixology at Explorar Hotels & Resorts, Joey Lai, is an award-winning mixologist celebrated for his distinct style and sustainable approach. As the winner of the prestigious HLC Global Bartender Scholarship and a Kosapan Ambassador, Joey brings his extensive knowledge and passion to the craft of mixology, combining tradition with forward-thinking practices. His expertise is showcased in numerous guest shifts and collaborations across Thailand, where he’s known for creating unique Negroni variations, such as the Tropical Negroni.

Joey led a cocktail masterclass in Bangkok at the Dusit Thani Food School, where students from Dusit Hospitality School were treated to a unique educational experience. The masterclass was not just about teaching the mechanics of cocktail making, but focused on how sustainability can be embedded into every step of the process—from sourcing local ingredients to reducing waste. Joey’s emphasis on sustainability encourages young professionals to think beyond the bar, making eco-friendly choices that benefit both the industry and the planet.

The Art of Mixology Pop-Up Event on 18 October was originally planned to take place at Mimi’s Rooftop Bar, but due to rain, it was moved indoors to Dusit Gourmet. Despite the change of venue, the event’s impact remained significant.

A portion of the event’s proceeds went directly towards scholarships for underprivileged students at the Dusit Hospitality School, reinforcing our commitment to community development and education. By attending the event, guests not only enjoyed a unique mixology experience in Bangkok but also contributed to the future of hospitality by helping these young professionals access educational opportunities.

An Evening to Remember at Dusit Gourmet
The Art of Mixology Pop-Up Event provided over 100 guests with an unforgettable experience, where Joey Lai showcased his sustainable cocktails made from local ingredients and eco-friendly techniques. Although the event was moved indoors, guests indulged in a creative selection of drinks and a signature BBQ and cocktails experience, all while enjoying the refined ambiance of Dusit Gourmet.
